What would a sample day look like with three meals and one snack for this type of patient?

Kelsey Marksteiner:  Okay. So a sample day is going to be different depending on the amount of calories that someone’s eating. So unfortunately, I can’t give a great example of that, but I can kind of walk you through it. The first thing I would do is figure out what a calorically appropriate diet would be for your patient. That’s going to help blood sugar control already to just be on a calorically appropriate diet. Beyond that, lacto-vegetarian can be tough, and often if I, first of all I don’t work a lot with vegetarians just because I screen them out in my process, because to me, well, I guess I would say I tend not to get a lot of people wanting to work with me that are vegetarian. Because I don’t write about those things, I don’t put that stuff on my website, so people tend to self-select depending on what they’re reading on your site. But occasionally I’ll get a vegetarian. But if I’m going to work with that person, I make sure that they are able to or willing to eat beans, eggs, dairy, and fish. And if they’re not, they’re not the right client for me. Because personally I just don’t want to spend my time trying to convince someone that those foods or meat is going to help their health. Because usually they are coming to me to help with their health condition and if I see that there’s probably not a way to help them given what their dietary limitations are, especially if it’s just something they’ve decided is healthier for them, I’m not going to waste my time trying to convince them. And that may sound harsh, but honestly there are so many people out there that want help from you that I would really recommend working with those people versus spending a lot of your time trying to convince other people to join you on that journey.
